Course Overview

For employees who are qualified to NVQ Level 2 standard or equivalent, and who are currently working in a quality hotel kitchen, restaurant or patisserie.

Course Structure

The course is delivered either over 15 months for 2 days (12 hours) per week OR 2 years for 1 day (6 hours) per week in the Pegwell Building.

The NVQ Level 3 programme of study covers the core units of Receipt & Storage of Commodities, Health & Safety and Managing Oneself. Students have the option of one of the following specialist areas:

  • Patisserie & Confectionery
  • Complex hot and cold desserts
  • Complex pastry products
  • Complex fermented dough products
  • Complex cake, sponge and biscuit products
  • Complex pastillage, marzipan and chocolate products
  • Complex pastillage and sugar products

Qualification Aims

Formal qualifications offered are a NVQ Level 3 in Hospitality and Catering, in either Food Service or Food Preparation & Cooking (Patisserie and Confectionery OR Kitchen and Larder)

Assessments/Examinations

There are no final examinations and assessment is based on observation with tutorial support being provided by your College tutor.
